Ok so I’m a bit behind so figured I’d do both at once! Soooooo Week One the blogger ambassador challenge was the week after xmas and it was to sort out your fridge and come up with something healthy for your leftovers. I didn’t have any leftovers as we had eaten at my parents over xmas. However I did find lots of gone out of date foods in my fridge and in my cupboards. The longest over was one dated 2011! Bleugh! So I went through all my cupboards and chucked out stuff that wasn’t in date and then figured out how I could use what I did still have in terms of a meal plan.
Week two’s challenge then landed in my inbox the next day, challenging me to meal plan! So that was easy because I’d already done it!
Breakfast is easy for me, its always a bowl of special K. I don’t have time for alot as I eat mine whilst I’m feeding little guy his and biggest is eating his. Lunch tends to be a bit hit and miss and I don’t really like to plan, its usually using whatevers in the fridge, scrambled egg, cheese on toast, sandwich etc… but I can plan my evening meals. So here was this weeks plan:
Sausage Goulash (Veggie)
Turkey and Spinach Pasta Bake
(Replacing turkey with quorn pieces)
Parsnip and Carrot Bake
Courgette and Mushroom Open Lasagna
Macaroni Pasta Bake (With Spinach, Mushrooms and Leeks)
Veggie Shepherdess Pie.
I weighed myself this week and had gained a lb. 1lb over xmas is pretty impressive really! I’m shocked it wasn’t more tbh! I did eat a few too many chocolates even though I knew I shouldn’t! I just couldn’t resist! I’m a sucker for the orange ones in Roses and Quality Street!
This week I got a bargain on eBay. A original baby jogger running buggy, 17 years old and in fantastic condition and pushes like adream! So I’ve begun the couch to 5K app. Today felt fairly easy. I’ll squeeze another run in on Friday this time without baby in tow so that will feel different I suspect and Sunday will probably be running without him again. I’m really hoping I can manage to stick to it. The advantage of having the buggy means I can get out and exercise with him in tow. I don’t get a chance in evenings as I work and weekends are family time so I’m going to make the most of this! And ideally I want to get back to running 5K’s again. My goal being the Race for Life, to be able to run the whole route. And if it helps my weight loss in the process even better!
